1st attempt Sourdough bread

Living well in the 21st century - Limassol, Cyprus - a gluten free dough on a brown kitchen counter with flour in the background.
Living well in the 21st century - Limassol, Cyprus - a cooked gluten free bread with a brown color.
The bread didn’t rise as much as I like but good for the first try. Like they say, practice makes perfect.

2nd attempt Sourdough bread

Living well in the 21st century - Limassol, Cyprus - a gluten free dough on a brown kitchen counter with flour in the background.
Living well in the 21st century - Limassol, Cyprus - baked bread with a brown color.
Sourdough turned out crunchy on top, but a piece of bread got stuck on the bottom of pot. Though, much better than the 1st attempt. The bread was cooked inside compared to my 1st attempt.

3rd attempt

Living well in the 21st century - Limassol, Cyprus - a gluten free dough on a brown kitchen counter with flour in the background.
Living well in the 21st century - Limassol, Cyprus - a baked bread with a brown color.
Living well in the 21st century - Limassol, Cyprus - a cut bread showing white and brown color.

Like they say; third time is a charm. The bread was cooked, and browned on the outside compared to the other attempts.

Found a recipe for sourdough starter discard. I work everyday on reducing food waste as much as possible. This includes starters:

Living well in the 21st century - Limassol, Cyprus - gluten free muffins with blueberries.

I used blueberries instead of bananas. Also, added egg, and arrowroot instead of flax seed for thickening. I was out of most ingredients, but I got creative with what I have in the kitchen. Work with what you have. Let your creative juices work :).
